- The wire whisk and pouring shield should be washed by hand.
- Do not store beaters on the shaft.
- Wipe the machine with a soft, damp cloth – do not use household cleaners.

A great work horse

I bought this mixer as I make a lot of bread and wanted somthing a little 'beefier' than my 25 year old Kenwood Chef (which had served my needs well). I was also intrigued by the spiral dough hook, which I know some professional mixers have.
This KitchenAid certainly does what it says. It is a substantial piece of equipment. It easily copes with 4kg of bread dough (the maximum I have tried) however the bowl is quite full with this quantity and as the dough hook works the dough, the dough has a tendency to rise up the hook onto the fixing plate. The details suggest it would take 6.8Kg dough. I would be relutant to try this based on my experience above. Working with 2kg dough is a trifle for it.
Mixing meringue is a doddle. I have never experienced such volume in the time it does it. My sponges are a dream now also!
I have three complaints about it - which may be user error but despite best efforts, I am not mastering them. The first is that when you crank up the head from the bowl, it is difficult to manoeuvre the bowl off the stand with the attachment in place. It takes a bit of fiddling to do it. The second, is that it is tricky to set the bowl on the stand. There is a knack to it that took me a while to master. It still is a little fiddly. The third is the space to pour in or add ingredients as you go along. The space is tight. The shield attachment helps but you still have to do it carefully.
Bear in mind this is a big piece of kit and heavy to move around. I suggest you need a fixed place in your kitchen to set it up and leave it there.
I have been trying to get a cover for it with no success. The handle that cranks up the bowl protrudes which makes the standard covers available too small (and too short). I have resorted to making my own.
Would I recommend it? Absolutely if you are baking bulk quantities and want to ease the effort - but bear in mind the negatives above. Its solidness gives the impression that it will be around for a long time in my kitchen.
